Quantitative food tests

Qualitative food tests will be familiar to teachers. There are some protocols available for making estimates of the quantity of different foodstuffs (protein, starch or reducing sugar) in certain foodstuffs.

Experiment topics

  • A quantitative food test: protein content of powdered milk

    Use an enzyme such as Neutrase to digest the protein in a solution of powdered milk and record the time to completion.
